Our beef comes from Cedar River Farms and aged for 21 days from all natural, grain fed cattle. The cut is lightly marinated in fresh marjoram, parsley, black peppercorn and allspice. The sauce is a play on a traditional peppercorn sauce called “Au Poivre” and made from beef stock and foie gras.
